How do our genes influence the way we taste food?

This study investigated how genetic differences in taste receptor genes influence taste sensitivity and taste preferences in healthy young adults.

What We Did and Why We Did It

We conducted a pilot study with 49 healthy young adults who completed a series of taste tests to measure their ability to detect tastes, how strongly they perceived them, and which taste intensities they preferred. Saliva samples were collected to analyze genetic variations in taste receptor genes related to sweet, salty, sour, bitter, fat, and umami tastes, and researchers examined whether these genetic differences were associated with taste perception.

People experience tastes differently, and these differences may influence the foods they choose to eat and their long-term risk of developing obesity and other chronic diseases.
