Zucchini bites! 
So simple, so delicious. They are also perfect for your littles (baby led weaning and toddlers).

I have made these with and without cheese and they are both delicious. 

What you need:
2 eggs
1 medium zucchini, shredded
1/2 cup whole wheat bread crumbs
1/2 cup panko crumbs
1 tsp. garlic powder (optional)
Salt and black pepper to taste
1/2 cup old cheddar cheese, shredded (optional)

1. Preheat oven to 400F and line a baking tray with parchment paper.
Shred zucchini using a grater, food processor or whatever you might have.
2. Take a dish cloth, place the shredded zucchini in it and squeeze to remove as much water as possible.
3. Beat eggs and then mix in zucchini, breadcrumbs, panko crumbs, cheese and spices.
4. Form into patties and place on tray. Bake for 25-30 minutes or until slightly golden brown around the edges.

Enjoy! 

You can have your little help squeeze out the zucchini, mix the ingredients together or even form the patties.
Involving them in the creation process may make them more inclined to give them a try.
